Here is an easy recipe for a Catalonian "Coca de San Joan"

Ingredients for cake:
2 eggs
1 natural yogurt
Using the empty yogurt pot as a measure:
2 pots sugar
3 pots flour
1 pot oil (best with olive oil, but also good with sunflower oil)
1 pkt.baking powder (or 3 level teaspoons)
Grated rind of a lemon
Pinch of vanilla flavouring if liked.
pinch of salt

Instructions:
1. Put all the ingredients into a bowl and mix well for 2 to 3 minutes until the mixture is really smooth and creamy.
2. Turn into a greased and floured rectangular baking tin and cook in a medium oven for about 20 minutes until golden brown.
3. Remove from the oven. Light the grill.

Ingredients for topping:
1 egg
Sugar
Pine nuts (piñones)
Optional: Glacé cherries
Brush the top of the cake with the beaten egg. Sprinkle with pine nuts and sugar and decorate with glacé cherries if you wish.
Put under grill until the sugar begins to melt (be careful to make sure it doesn't burn!)
