PRODUCTION

Hard corn "Pasta" is produced with an easy process with stages:

DOUGH Hard wheat flour and water are mixed
KNEADING The dough is mixed and airless.
DRAWING The dough is moulded in differents shapes, for example:"spaghetti", "maccheroni"; "fusilli"... .
DRYING Water is uniformly reduced by two stages:

DOSSIER:dampness is reduced down to twenty per cent.

SEASONING:water is reduced to ten-thirteen per cent.

We have to remark that we can buy also fresh "Pasta". This food is produced using tender flour, with dampness not over thirty per cent
